Candy Corn Chocolate Chip Cookies

  • Ingredients:
    • 2-1/4 cups all-purpose flour
    • 1 tsp baking soda
    • 1 tsp Kosher salt
    • 1 cup (2 sticks) unsalted butter, softened to room temperature
    • 3/4 cup dark brown sugar
    • 3/4 cup granulated white sugar
    • 1 tsp vanilla extract
    • 2 large eggs
    • 2 cups semi-sweet chocolate chip morsels
    • 1 cup candy corn, or amount to taste
  • Instructions:
  1. Preheat your oven to 375. 
  2. Line a baking sheet with parchment paper or a silicone baking mat. 
  3. Using a small bowl, stir together flour, baking soda, and salt, set aside 
  4. Using a large mixing bowl, beat together the butter, both sugars, and vanilla extract 
  5. Add one egg at a time, beating well after adding each. 
  6. Add in flour mixture 1/4 cup at a time
  7. Add in chocolate morsels
  8. Using a cookie scoop or rounded tablespoon, drop dough onto parchment-lined baking sheets
  9. Put 3 candy corn on each dough ball, press each piece of candy corn into the dough ball so it is embedded, otherwise, the candy might melt off the side of the cookie
  10. Bake for 9-11 minutes or until the edges are brown
  11. Allow cooling on sheets for about 10 minutes so the cookies can firm up and then transfer to wire racks to finish cooling

Pumpkin Cupcakes

  • Ingredients:
    • All-purpose flour
    • Baking powder and baking soda
    • Salt
    • Spices including cinnamon, nutmeg, ginger and cloves
    • Unsalted butter
    • Vegetable oil
    • Brown sugar and granulated sugar
    • Eggs
    • Vanilla
    • Canned pumpkin
    • Orange juice
  • Instructions:
  1. Preheat the oven to 350 degrees
  2. Whisk together the dry ingredients
  3. Use an electric mixer and mix together the sugars. 
  4. Add in butter and half of the oil and whip until fluffy. 
  5. Mix in remaining oil then add in the eggs one at a time. 
  6. Mix in vanilla.
  7. Mix in flour with pumpkin and orange juice.
  8. Filling a pan about three-fourths 
  9. Bake until a toothpick inserted into the cupcake comes out clean
  10. Cool, then frost with a frosting of your choice
  11. Top with candy corn or pumpkins
