Scrambled Tofu Breakfast Burrito

It’s the perfect savory breakfast to-go. Made with tofu crumbles, potatoes, peppers, and avocado, this burrito will give you a burst of energy without the weight of cheese and meat. To make the tofu even more flavorful, I like to add curry powder and turmeric to the mix. Turmeric has amazing anti-inflammatory properties, and the curry powder adds an awesome kick!

 
Vegan Overnight Oats

What HB girl has time to wait for oatmeal to cook in the morning? The solution: overnight oats. While these oats may be trendy, they are convenient, portable, and really quite tasty! The recipe is delicious with slivered almonds and maple syrup mixed in, as well.

 

Chickpea Omelet Mix

Many people think going vegan means you have to give up many everyday staples like eggs, cheese, and breakfast meats. Nowadays, that’s not the case! This omelet gets its egg-y consistency from chickpea flour and black salt, and its cheesy taste from nutritional yeast (nooch). Paired with vegan bacon, it’s an unbeatable breakfast.
